Basic Biltong Spice

Below you will find all the ingredients and the amounts needed. I am not an expert and every ones taste is different, so please use this only as a guide. You can change the amount of the ingredients to your taste and add other spices like Garlic or Chilli or Peri-Peri. Many people have their own ‘secret’ recipe or a recipe that is in their family for many years.

  •  1/4 cup, crushed coarse salt (around 63ml)
  • 2 tea spoon brown sugar
  • 3 table spoon roasted and coarse ground Coriander
  • 1 tea spoon black pepper
  • 1/2 tea spoon bicarbonate of soda
  • 1/2 tea spoon ground cloves

Blend all of the above ingredients together. You will need around 40g to 50g  spice per kilogram of meat.
